After such a busy few weeks, we needed to take a little healing time-out. So, today we did just that with a Gentle Repose. With some forethought and super-easy infusing and syrup-making techniques, you too can make one of these delicious, refined without being obnoxious, cocktails!
First, pour half of a bottle of Goodridge & Williams’ Mapleshade Repose into a jar. Add three chamomile tea bags and a tbsp of Honey to the jar and give it a shake. Let it sit for 3-4 days, and then remove the tea bags. Be sure to squeeze all the boozy goodness out of them!
Next, make a Sage Simple Syrup. It’s as easy as adding equal parts water and sugar to a pot and adding chopped sage leaves. Let it boil down until it’s lightly sticky, and then carefully pour into a mason jar to cool, either on the counter or in the fridge.
To make the cocktail, in a dry shaker add: 1oz Chamomile-infused Goodridge & Williams Mapleshade Repose 1oz Sage Syrup .5 oz Odd Society Bittersweet Vermouth .25oz Lillet Blanc .5oz Lemon Juice 1oz Egg White
Give everything a good shake, then add ice and shake again. Strain into a coup glass, add 3 drops of Bittered Sling’s Kensington Bitters, and garnish with either a fresh or candied Sage leaf.
